2-1/4 cups Muffin Mix
1 3.4 oz package instant lemon pudding mix
1 Tbs. poppy seeds
1/4 tsp. grated lemon peel (I never put this in, just FYI)
1 cup milk
2 eggs, beaten
1/4 cup veg. oil
Preheat oven to 400 degrees. Spray muffin pans with cooking spray. In a medium bowl combine Muffin Mix, pudding, poppy seeds, and peel.
Combine milk, eggs, and oil in a medium bowl. Add all at once to dry ingredients. Stir until moistened; batter should be lumpy. Fill prepared muffin pans 3/4 full. Bake in preheated oven for 12-15 minutes. Prepare Lemon Glaze. Drizzle glaze onto warm muffins.
Lemon Glaze
1 cup powdered sugar
1 Tbs lemon juice
Mix together until smooth.
